This week's Muffin Tin Monday theme is Apples. Because Rosh Hashanah is coming up, we decided to celebrate a sweet new year with an apples and honey taste test (Fuji and Pink Lady won), and since we are proper Texas Jews, we included apple & honey quesadillas.

And with our leftover apples, we made more applesauce in the slow cooker (we added lemon juice, cinnamon, vanilla and water and are cooking on low for 4-6 hours):

LOVE the honey and cheese quesadillas and the cinnamon apples look delicious!
I've never done honey and cheese, but that sounds good. We have done peanut butter and honey quesadillas, though.

Does that really work? Apple sauce in a crock pot? I mean it must if you are posting it. I don't own a crock pot, my son loves apple sauce. You may have given me a reason to buy one. LOL
@Lisa Anne--I just finished making it; I just had to mash it a little with a fork, and now it's ready to be eaten.
